Chana Masala Recipe: A Flavorful Delight classic Indian dish

Chana Masala, also known as Chole Masala or Chickpea Curry, is a beloved North Indian dish that is not only delicious but also packed with protein and essential nutrients. This vegan and gluten-free recipe is a flavorful delight that can be enjoyed as a hearty main course or a delightful side dish. Here’s how to prepare this classic Indian dish:

Ingredients:

  • 2 cups of dried chickpeas or 2 cans of canned chickpeas
  • 2 large onions, finely chopped
  • 3-4 ripe tomatoes, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1-inch piece of ginger, grated
  • 4-5 cloves of garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1/2 teaspoon black salt (optional)
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh coriander leaves, chopped, for garnish
  • Lemon wedges for serving

Instructions:

  1. Prepare the Chickpeas:
    • If using dried chickpeas, soak them in water overnight or for at least 8 hours. Drain and rinse.
    • If using canned chickpeas, rinse them under cold water to remove excess salt.
  2. Cook the Chickpeas:
    • If using a pressure cooker, add the soaked chickpeas with enough water to cover them and a pinch of salt. Pressure cook for 3-4 whistles until they are soft and tender. If not using a pressure cooker, you can cook the chickpeas in a regular pot, which will take longer.
  3. Sauté the Aromatics:
    • Heat oil in a large pan. Add the cumin seeds and allow them to splutter.
    • Add the finely chopped onions and sauté until they turn golden brown.
  4. Add the Spices:
    • Stir in the ginger, garlic, and green chilies. Sauté for a few minutes until the raw smell disappears.
    • Add the ground coriander, cumin, turmeric, and red chili powder. Cook for a couple of minutes until the oil starts to separate.
  5. Tomatoes and Cook:
    • Add the finely chopped tomatoes, salt, and cook until they turn soft and the oil begins to separate from the mixture.
  6. Combine with Chickpeas:
    • Add the cooked chickpeas along with a bit of water from the chickpea cooking process. Simmer for 10-15 minutes, allowing the flavors to meld.
  7. Finish with Garam Masala:
    • Stir in the garam masala and black salt (if using). Adjust salt and spice levels according to your taste.
  8. Garnish and Serve:
    • Garnish the Chana Masala with fresh coriander leaves and serve hot with rice, naan, or roti. Squeeze lemon juice over the top for an extra burst of flavor.
