Ingredients:
- 2 cups of dried chickpeas or 2 cans of canned chickpeas
- 2 large onions, finely chopped
- 3-4 ripe tomatoes, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- 1-inch piece of ginger, grated
- 4-5 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1/2 teaspoon black salt (optional)
- Salt to taste
- 2 tablespoons cooking oil
- Fresh coriander leaves, chopped, for garnish
- Lemon wedges for serving
Instructions:
- Prepare the Chickpeas:
- If using dried chickpeas, soak them in water overnight or for at least 8 hours. Drain and rinse.
- If using canned chickpeas, rinse them under cold water to remove excess salt.
- Cook the Chickpeas:
- If using a pressure cooker, add the soaked chickpeas with enough water to cover them and a pinch of salt. Pressure cook for 3-4 whistles until they are soft and tender. If not using a pressure cooker, you can cook the chickpeas in a regular pot, which will take longer.
- Sauté the Aromatics:
- Heat oil in a large pan. Add the cumin seeds and allow them to splutter.
- Add the finely chopped onions and sauté until they turn golden brown.
- Add the Spices:
- Stir in the ginger, garlic, and green chilies. Sauté for a few minutes until the raw smell disappears.
- Add the ground coriander, cumin, turmeric, and red chili powder. Cook for a couple of minutes until the oil starts to separate.
- Tomatoes and Cook:
- Add the finely chopped tomatoes, salt, and cook until they turn soft and the oil begins to separate from the mixture.
- Combine with Chickpeas:
- Add the cooked chickpeas along with a bit of water from the chickpea cooking process. Simmer for 10-15 minutes, allowing the flavors to meld.
- Finish with Garam Masala:
- Stir in the garam masala and black salt (if using). Adjust salt and spice levels according to your taste.
- Garnish and Serve:
- Garnish the Chana Masala with fresh coriander leaves and serve hot with rice, naan, or roti. Squeeze lemon juice over the top for an extra burst of flavor.
Chana Masala is a delightful and wholesome dish that’s cherished by people worldwide. Its rich blend of spices and robust flavors make it a favorite for vegetarians and non-vegetarians alike. Enjoy this classic Indian recipe and savor the taste of traditional cuisine right in your own kitchen.
