1. Masala Omelette:

– Ingredients:
– 2 eggs
– 1/4 cup finely chopped onions, tomatoes, and bell peppers
– 1/2 tsp red chili powder
– Salt to taste
– Cooking oil
– Instructions:
1. Beat the eggs in a bowl and add the chopped vegetables, red chili powder, and salt.
2. Heat a non-stick pan, add a little oil, and pour the egg mixture.
3. Cook on low-medium heat until the omelette sets and turns golden brown. Flip and cook the other side.
4. Serve hot with toast or paratha.

2. Poha:

– Ingredients:
– 1 cup flattened rice (poha)
– 1/4 cup finely chopped onions
– 1/4 cup boiled and chopped potatoes
– 1/4 cup green peas
– 1/2 tsp mustard seeds
– 1/2 tsp turmeric powder
– Salt to taste
– Fresh coriander leaves for garnish
– Instructions:
1. Rinse the poha under running water and drain well.
2. Heat oil in a pan, add mustard seeds, and let them splutter.
3. Add onions and sauté until they turn translucent.
4. Add potatoes, green peas, turmeric powder, and salt. Cook for 2-3 minutes.
5. Add the drained poha and mix well. Cook for another 2 minutes.
6. Garnish with fresh coriander leaves and serve hot.

3. Upma:

– Ingredients:
– 1 cup semolina (rava)
– 1/4 cup finely chopped onions
– 1/4 cup chopped carrots and peas
– 1/2 tsp mustard seeds
– 1/2 tsp urad dal (split black gram)
– Curry leaves
– Salt to taste
– Instructions:
1. Dry roast the semolina until it turns light brown and aromatic. Keep it aside.
2. Heat oil in a pan, add mustard seeds, urad dal, and curry leaves. Let them splutter.
3. Add onions and sauté until they become translucent.
4. Add the chopped vegetables and cook for a few minutes.
5. Pour in 2 cups of water and bring it to a boil.
6. Gradually add the roasted semolina while continuously stirring to avoid lumps.
7. Cook for a few minutes until the upma thickens.
8. Serve hot with coconut chutney or pickle.

4. Dalia (Broken Wheat) Porridge:

– Ingredients:
– 1/2 cup dalia (broken wheat)
– 1 cup water
– 1/4 cup milk
– 2-3 tbsp sugar
– A pinch of cardamom powder
– Chopped nuts for garnish (optional)
– Instructions:
1. Dry roast the dalia until it turns golden brown.
2. Boil water and add the roasted dalia. Cook until it becomes soft and absorbs the water.
3. Add milk, sugar, and cardamom powder. Mix well and cook for another 2 minutes.
4. Garnish with chopped nuts and serve hot.

5. Bread Upma:

– Ingredients:
– 4-5 slices of bread, cut into small pieces
– 1/4 cup finely chopped onions
– 1/4 cup chopped bell peppers (optional)
– 1/4 cup boiled and chopped vegetables (carrots, peas, etc.)
– 1/2 tsp mustard seeds
– 1/2 tsp cumin seeds
– 1/2 tsp turmeric powder
– Salt to taste
– Fresh coriander leaves for garnish
– Instructions:
1. Heat oil in a pan and add mustard seeds and cumin seeds. Let them splutter.
2. Add chopped onions and sauté until they turn translucent.
3. Add bell peppers (if using) and boiled vegetables. Cook for a few minutes.
4. Add turmeric powder and salt. Mix well.
5. Add the bread pieces and toss everything together until the bread is coated with the spices and vegetables.
6. Cook for a few more minutes until the bread is slightly crispy.
7. Garnish with fresh coriander leaves and serve hot.
