Ingredients for making masala dosa :
For the Dosa Batter:
1 cup rice
1/4 cup urad dal (split black gram)
1/4 cup chana dal (split chickpeas)
1/4 tsp fenugreek seeds
Salt, to taste
Water, as needed
For the Potato Filling (Masala):
3 4 large potatoes, boiled and mashed
1 onion, finely chopped
2 3 green chilies, finely chopped
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp turmeric powder
A pinch of asafoetida (hing)
Curry leaves
Salt, to taste
2 tbsp oil
Chopped fresh coriander leaves, for garnish
Instructions:
For the Dosa Batter:
1. Wash and soak the rice, urad dal, chana dal, and fenugreek seeds in water for at least 5 6 hours or overnight.
2. Drain the water and grind these ingredients to a smooth batter using a little water. The consistency should be like pancake batter.
3. Add salt to the batter and mix well. Allow the batter to ferment for at least 8 hours or overnight in a warm place. The fermentation process is crucial for achieving the characteristic flavor and texture of dosas.
For the Potato Filling (Masala):
1. Heat oil in a pan. Add mustard seeds, cumin seeds, and asafoetida. Allow them to splutter.
2. Add the chopped onions, green chilies, and curry leaves. Sauté until the onions turn golden brown.
3. Add turmeric powder and mix well.
4. Now, add the mashed potatoes and salt. Mix everything thoroughly and cook for a few minutes. Remove from heat and keep it aside.
Making the Masala Dosa:
1. Heat a non stick dosa pan or a griddle. Grease it lightly with oil.
2. Pour a ladleful of dosa batter in the center of the hot pan. Use the back of the ladle to spread the batter in a circular motion, making it as thin as possible.
3. Drizzle a little oil around the edges of the dosa and let it cook until the edges start to turn golden brown.
4. Place a portion of the prepared potato filling in the center of the dosa.
5. Carefully fold the dosa in half, covering the potato mixture.
6. Serve the Masala Dosa hot with coconut chutney and sambar, two classic South Indian side dishes.
Enjoy your homemade Masala Dosa, a delicious, crispy, and savory delight that’s sure to satisfy your taste buds. It’s perfect for breakfast, brunch, or even as a light dinner option.
