Baingan Bharta is a flavorful Indian dish made with roasted and mashed eggplant. Here’s a simple recipe for you to try:
Ingredients:
1. 1 large eggplant (baingan)
2. 1 large onion, finely chopped
3. 2 tomatoes, finely chopped
4. 2 green chilies, chopped (adjust according to your spice preference)
5. 1 tablespoon ginger garlic paste
6. 1/2 teaspoon cumin seeds
7. 1/2 teaspoon turmeric powder
8. 1 teaspoon red chili powder (adjust to taste)
9. 1 teaspoon coriander powder
10. Salt to taste
11. 2 tablespoons oil
12. Fresh coriander leaves for garnish
13. Lemon wedges for serving
Instructions:
1. Roast the Eggplant:
Pierce the eggplant with a fork in a few places.
Roast the eggplant directly over an open flame or on a gas stove until the skin is charred and the eggplant is soft. You can also roast it in an oven at 400°F (200°C) for about 30 40 minutes, turning it occasionally.
Let the roasted eggplant cool, then peel off the charred skin and mash the pulp. Discard the stem.
2. Prepare the Bharta:
Heat oil in a pan over medium heat.
Add cumin seeds and let them splutter.
Add chopped onions and sauté until they turn golden brown.
Add ginger garlic paste and green chilies. Sauté for a minute.
Add chopped tomatoes and cook until they become soft and oil starts to separate.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
3. Add Roasted Eggplant:
Add the mashed eggplant to the pan and mix it well with the onion tomato masala.
Cook for 8 10 minutes, stirring occasionally, allowing the flavors to blend and the excess moisture to evaporate.
4. Garnish and Serve:
Garnish with fresh coriander leaves.
Baingan Bharta is ready to be served. Serve it hot with roti, naan, or rice.
